Smoky BBQ Sloppy Joe Freezer Meal

I went to a great Pampered Chef freezer meal workshop yesterday and came home with some really amazing tasting recipes!  The BBQ Sloppy Joes I made didn't even make it to the freezer!!!  We cooked that one up when I got home and it got rave reviews all around.  I believe my 6 year old's exact words were, "BEST BURGER EVERRRRR!!!!".  This has such a great smoky flavor to it!  We used Pampered Chef spices, but I would imagine you could find a like spice in the grocery store.  I know Target sells their very own brand of Sloppy Joe seasoning in their spice aisle.  If you do want to try this one (& it is AMAZING) I'll put a link to the Pampered Chef catalog at the bottom.  






BARBECUE BEEF SLOPPY JOES
FREEZER MEAL – Skillet - 6 servings. Adapted from The Pampered Chef Power Cooking recipe.


INGREDIENTS:
1 lb. 90% lean ground beef or 93% lean ground turkey
1 medium yellow onion
1 clove FRESH garlic 
1 c. ketchup
2 tbsp. Smoky Barbecue Rub
2 tsp. cider vinegar


COOKING DAY:
6 hamburger buns
Optional toppings:
Coleslaw
Shredded cheese
Shredded lettuce
Sliced green onion


PREP:
Need: 2 gallon-size FREEZER bags.
1. Wedge onion with Veggie Wedger. Chop onion wedges using Food Chopper.
2. Place onions, beef and garlic pressed with Garlic Press into Skillet. Cook over medium-high heat approx.
15 minutes or until beef is no longer pink, breaking into crumbles using Mix ‘N Chop. Allow to cool slightly.
3. Combine meat, ketchup, Smoky Barbecue Rub and cider vinegar in FREEZER bag. Toss to coat.
Squeeze out as much air as possible. Seal, flatten & freeze.


TO THAW: Transfer frozen bag to refrigerator the night before preparing.


COOKING DAY:
1. Pour thawed mixture into 10” Skillet or Saucepan. Bring to a simmer over medium heat.
2. Divide beef mixture among 6 hamburger buns. Top with coleslaw, shredded cheese, shredded lettuce or
sliced green onion, if desired.

Nutrients per serving: Calories 300, Total Fat 10 g, Saturated Fat 3.5 g, Cholesterol 50 mg, Carbohydrate
33 g, Protein 20 g, Sodium 860 mg, Fiber 2 g

Been a while!

Wow, it really has been a while since I've posted or done giveaways!  Life has been incredibly busy and non-stop recently it seems!  We are gearing up for the end of the school year for my Preschooler and Kindergartener and have had tons of fun activities going on!  Now, hopefully I can get back into the swing of bringing awesome giveaway finds.  :)

Just because

So my Mom got Liliana a custom Tutu made from Something Sassy Tutu's & More on Facebook and she also sent us some absolutely adorable headbands to match!  I am in LOOVVVEEEE!!  Such beautiful colors and very well made!!  I will say that I am happy with the few shots I was able to get!  So hard to get an 8 month old to sit still, lol!

Happy New Years!

What a great year this has been (For the most part)!

I've became a Mom for the third time!  With the help of my WONDERFUL doctor I had my 2nd succesful induced VBAC (w/out pain meds b/c of the super speedy delivery) which I was told after I had my first I'd never be able to have a regular delivery - WRONG!  I never liked that Drs office anyways, lol. 

My husband and I celebrated our 5th wedding anniversary! 

My daughter, Abigail, started preschool and is doing wonderfully!  Her teachers gave her the award for being the "Most Glamourous" and constantly talk about how smart she is. 

Jacob is excelling in math.  We went from being held back, behind, and constantly in trouble in school and transferred him when we moved and now he is doing GREAT!  His teacher figured him out and knows how to work with him.  It's truly amazing the difference one person can make. 

Liliana has been flying through her firsts!  She's now standing up on everything and before I know it she'll be one.  :(   Now if only the little lady would start eating baby food we'd be all good! 

That's about it for now!  I just wanted to say a few of my favorite things from this year.  It's hard to believe another year has passed.  Time flies when your having fun they say!
